This recipe for Sugar Free Lemon Shortbread Cookies features two of my favorite things. I am a fan of both lemon anything and shortbread cookies.

However, this is that cookie that is especially popular during the fall and holiday seasons. I like to think of this cookie as a fun version of a regular sugar cookie because it has extra texture with a bit of cinnamon on top. Snickerdoodle cookies however are a bit different from sugar cookies. What you may first notice about the Snickerdoodle is that it is a different texture from a sugar cookie. That is, the Snickerdoodle is a more fluffy cookie than the average sugar cookie is.

Sugar Free Soft Pumpkin Cookies

This delicious and seasonal recipe for Sugar Free Soft Pumpkin Cookies can also be made gluten free, low carb, or keto as well.

To be honest, it is hard to notice that this sugar free cookie tastes any different from the regular sugared pumpkin cookie. I think that likeness in tastes between the two cookies has something to do with the pumpkin that is added. What I should say is that this cookie is more about the pumpkin than it is about the sugar cookie that is part of the recipe.

Sugar Free Shortbread Cookies

Sugar Free Shortbread Cookies

I know that shortbread cookies really are more about the butter than anything else. However, shortbread do normally contain a bit of sugar as well. While I would probably never cut back on the butter, at least during the holiday season, I would cut back on the sugar.

There is a lot that you can do with a shortbread cookie recipe.

Obviously, you can simply roll or press the dough into the shape of your choice. As I mentioned, I love putting my shortbread dough through a cookie gun. However, I probably should mention that a cookie gun is a cookie press.

8 Santa-approved Keto Christmas Cookies – Sugar Free Londoner

Keto Christmas cookies are one of the best things about December! I've assembled a collection of my very favourite festive sugar free cookies. And I promise you, Santa is going to love them!

All of these cookie recipes are super simple to make, have plenty of 5 star reviews and taste DELICIOUS. Plus, they are extra low in carbs, so you can enjoy a holiday treat without busting your macros.

I love keto baking and I love baking keto cookies! In fact, I love it so much that I have written an entire book about it (check out the Keto Cookies Cookbook here!

December is just the perfect time to spend a leisurely afternoon in the kitchen making a batch (or two) of low carb Christmas cookies. There is something meditative about rolling out dough, decorating cookies and the pleasure of spending time in a kitchen that smells of spice and all things nice.

While low carb bread and keto cakes normally require a little more attention, keto cookies are usually fairly simple and forgiving. If you leave a cookie in the oven a little longer, it'll crisp up more - and still taste good.

From keto sugar cookies to low carb cinnamon stars to sugar free biscotti - all of these keto Christmas cookies recipes are tried and tested, by myself and my family AND plenty of Sugar Free Londoner readers.

The classic Christmas cookie gone low carb! I love that these super simple Keto sugar cookies come in at only 1 g net carbs per cookie. They are made with a mix of almond flour and coconut flour.

Instead of rolling out the dough and using cookie cutters, I simply rolled the dough into a log and sliced cookies. It works a treat!

They are great all on their own (very crispy!), but sometimes I like to dip them in sugar free icing.

I have just updated this recipe for Keto Cinnamon Stars. It's my keto version of the super popular German Christmas cookie recipe. Many of you know that I grew up in Germany, and for me, Christmas wouldn't be the same without a batch of "Zimtsterne"!

Many traditional cookie recipes use nut flours such as almond flour or hazelnut flour, which makes them gluten free. So, when I converted these into keto Christmas cookies, I just had to swap out the sugar for sweetener.

I like to roll them out thick and bake them fairly short. This way, the inside stays moist and tastes almost like marzipan. Yum.

Readers are always amazed at how crispy these keto biscotti are. The recipe stays very close to the original (minus the sugar, of course).

The biscotti are baked twice - first as a log, and then, one the log has cooled, it is sliced and the biscotti are baked again, lying on the side.

I've added pecans and pistachios to the dough, but anything from sugar free dried cranberries to sugar free chocolate chips would work just as well!

Keto ginger cookies are an absolute classic in this household. I love the spicy kick of the ginger - and I love that they are ready in less than 30 minutes!

This almond flour cookie recipe comes together in minutes and of course, you can use any cookie cutter shapes you like. How about stars or Christmas trees? You could even make gingerbread men with this recipe!

As with all low carb cookie recipes it helps a million to chill the rolled out dough in the freezer before using the cookie cutters. It's my ultimate keto cookie baking hack. This way, the dough does not stick and cuttin gout shapes is a breeze!

This sugar free take on classic shortbread always goes down well. These cookies are small and deliciously buttery. I've topped them with a rich coconut butter glaze, but they also work well without.

One reader of mine called these keto cookies "elegant", which, of course, I lapped up! So, get yourself a pretty tea cup (with a saucer, please!) and have a classy high tea nibbling on keto shortbread.

When I was growing up, we always had a tray filled with nuts on our table during the holiday season. We're talking nuts in their shells, alongside a cute wooden nut cracker in the shape of a soldier.

Nuts are synonymous with Christmas for me. So, when I came across a festive Italian walnut cookie called dolci di noci, I had to make a keto version!

This is the easiest cookie recipe you can imagine - you only need 4 ingredients: ground walnuts, 1 egg, sweetener and optional cinnamon. Of course, different nuts such as pecans or hazelnuts would work just as well here.

Coconut macaroons are a favourite of my mum's. I used her recipe and swapped out the sugar for sugar free sweetener.

Keto macaroons should actually be classified the ideal keto treat. They contain plenty of egg white, which are a great source of protein and coconut, which is high in good fats and a nutritional powerhouse.

My mum has given these the official thumbs up 🙂

It took me a few tries to get this recipe right, but I finally got there! These low carb sugar free meringue cookies are just such a treat for your holiday table.

I'm using a mixture of inulin and powdered erythritol to make these meringues crisp and melt-in-the mouth good.

If you have a piping bag, they will look super professional. But if you don't, simply dollop meringue heaps onto the baking tray. It will taste just as good!

Want more cookies? I have TONS of easy cookie recipes on my website which are not strictly keto holiday cookies. But who says low carb Christmas cookie recipes have to be traditional? I'm sure nobody would complain if you whipped up a batch of Low Carb Keto Peanut Butter Cookies or a surprised the family with some Keto Chocolate Chip Cookies!

Christmas biscuits without gluten, milk and sugar

Christmas biscuits… Sweet for Christmas… December is in the yard: the most magical time of the year, which, with its festive mood, does not let us fall into despondency due to the lack of light. It seems to me that wise people did not in vain come up with the idea of celebrating Christmas and the New Year in the middle of this crown of the head. November is already outlived, and December passes in exceptional preparation for the holidays, and we have no time to pay attention to dullness and slush. Yes, and Christmas decorations are great to decorate the picture of the world. January is full of building bright plans for the future, and there is already February - when there is a lot of snow, and daylight hours have increased significantly.

In Denmark, where I live, there is a whole galaxy of Christmas traditions:

from decorating your home to baking Christmas cookies. Every family has their favorite recipes. Everyone bakes! And the old women, having gathered for a Sunday Sabantuychik, and even dads with children, importantly tightening their apron. My ex-mother-in-law (a Dane) invariably gathered her girlfriends at her place in December, and all day long they first kneaded mountains of special dough for Christmas cookies, and then carefully cut all these sausages with cardamom and cloves, cut out figures with special molds in the form of stars and Christmas trees, drinking hot mulled wine and taking a new batch of cookies out of the oven. Then the baked cookies were divided equally among everyone and each went home with a pile of beautiful tin boxes in Christmas patterns filled with fragrant Christmas cookies. These were emergency supplies for December - they were issued almost by the piece to guests, because the quantity was always strictly limited - handmade!

Of course, supermarkets in November and December are also bursting with various Christmas cookies, but ... this is not at all the same! Therefore, almost every Danish family bakes cookies themselves.

When I had more time, I also spent more than one December evening baking, but now, I confess, I only have enough for a couple of tins of cookies, and I do it more for the children. After all, if the children have grown up at least a little, then by tradition they are enthusiastically involved in this process. My children themselves ask me to bake Christmas cookies and are always actively involved in the process. And of course, I can’t refuse them 🙂 But since I’m not just a mom, but a mom turned on healthy food, in recent years I’ve been trying to find healthy recipes for Christmas cookies. And I get it! I'm sure I'm not alone, so in this post I decided to share with you healthy Christmas cookie recipes - gluten free , dairy free and industrial sugar free.

Before we get down to the recipes, I want to remind you that although this cookie does not contain ordinary sugar, it is nevertheless SWEET due to syrups and dried fruits. Yes, it's all natural, but still, isn't the super-healthy . Therefore, one should treat this liver (almost) the same way as the usual one: do not burst with handfuls without a twinge of conscience 🙂 So ...

Christmas Cookie Recipe #1: Almond

ATTENTION: cookie dough must be kept in the refrigerator for at least 1 hour!

Ingredients (for about 40 pieces):

  • 125 grams cold pressed coconut oil
  • 125 ml agave or maple syrup
  • 1 large egg
  • 2 tsp baking powder
  • 75 grams almond flour (or regular almonds ground into flour in a blender/mini cutter)
  • 125 grams of rice flour
  • grains 1 vanilla sticks
  • rice milk for lubrication (or other vegetable)
  • 50 grams chopped almonds (for decoration)

Cooking Christmas cookies:

Blend the syrup and coconut oil with a mixer until you have a smooth paste. Crack in 1 egg, add the baking powder and beat until fluffy. Add both types of flour and mix with a spoon (there should be no lumps). You should have a fairly thick ball of dough. Wrap it in cling film and leave it in the refrigerator for at least an hour.

The dough can be stored in the refrigerator for up to 2 days: it is very convenient if you are invited to such a Sunday Sabantuy for baking Christmas cookies, because you will have everything ready in advance!

After an hour, take the dough out of the refrigerator and divide into 4 equal parts. Preheat oven to 170 degrees Celsius. Roll the dough into 4 sausages about 30 cm long (the length of a standard baking sheet). Line 2 baking sheets with parchment paper and place 2 sausages on each one, a good distance apart (cookies will grow in width), squashing them flat with the palm of your hand. Bake 1 PAN AT A TIME for about 12 minutes - remove until it starts to brown.

Cut the freshly baked Christmas cookies immediately with a knife until they are firm and leave to cool on a wire rack.

Thanks for this recipe to one of my teachers at the school of nutrition - biopath Lisbeth Tordendahl

You can bake these Christmas cookies yourself or in a pleasant company of friends or children. At the same time, be surprised how tasty cookies made from healthy ingredients can be! Previously, I did not understand the Danish mother-in-law, who so protected the creation of her hands from our hungry mouths. And now ... now I understand - how much work and love in every piece. And yes, of course, cookies - they are cookies in Africa - sweet and not very healthy, but there must be pleasure in this life! Especially when it's pleasure - with vitamins 🙂

Step by step cooking

Cooking time: 6 h PT6H
  1. Step 1:

How to bake Christmas gingerbread cookies? Prepare the items on the list. Oil can be taken immediately from the refrigerator. It is better to take liquid honey or replace it with molasses. All spices should be ground, they can be replaced with a special gingerbread mixture.

  2. Step 2:

Put sugar, brown sugar, honey and water into a heavy bottomed saucepan or saucepan. Stirring constantly, bring the mixture to a boil. Remove from fire. Both types of sugar should be completely dissolved.

  3. Step 3:

Add all the spices, butter and baking soda to the sugar mixture. The mass will slightly change color. Stir to dissolve all ingredients. Cool the mixture to room temperature. In the next step, add flour in parts, watching the consistency of the dough. It may take more or less flour for you than for me.

  4. Step 4:

Add the flour to the cooled mixture and knead the dough. Gather the dough into a ball. The dough is easy to assemble into a ball if you throw it in your hands, but working with such a dough is difficult - it sticks strongly to your hands. Wrap the dough in plastic wrap and refrigerate overnight or at least three hours. You can store this dough in the refrigerator for several days to use later. Take the chilled dough out of the refrigerator. Turn on the oven to about 170 degrees.

  5. Step 5:

Pinch off pieces of dough and place each one on the baking parchment in turn. Top with another sheet and roll out the dough between the two sheets. Roll out into a very thin layer, remove the top sheet of paper and cut various shapes with cookie cutters. Remove excess dough. Transfer paper with cookies to a baking sheet and bake in a preheated oven for about 5-10 minutes. Focus on your oven.

  6. Step 6:

Remove the finished cookies from the paper and cool. It turns out very crispy (if the dough was thinly rolled out). Serve it with tea, milk, hot chocolate or grog and mulled wine. In a closed container, such cookies can be stored for many days!

These biscuits are very easy to prepare, fragrant and tasty. It contains no perishable ingredients, sugar and honey act as preservatives, so it can be stored for a very long time. It can be prepared for the whole family for the holidays, or can be put as gifts for Christmas and New Year for guests.
Gingerbread cookies are found in various cuisines around the world, for example, they are very common in Sweden, they are called Pepparkakor. There is a legend that Pepparkakor makes a person happier. The Swedes say that the more cookies you eat during Christmas time, the kinder and happier you will be.
There is also a mini-game in Sweden - gingerbread fortune-telling. You need to put a cookie on your palm and make a wish, squeeze your palm. If the cookie breaks into three pieces, then the wish will come true. Try it, cook these cookies and make a wish!

Be aware that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough.
