How long will this continue? Not that spices change Unless the spices lose their potency. It is generally accepted that spices should be stored for about a year after opening, but this assumes that the store you buy them from has a high turnover rate and does not allow spices to sit on the shelves for a while. There is a legend about the appearance of this dish in Italy. Peasants used basil and olive oil to make an ointment for eczema. And one of them accidentally spilled it on a piece of bread and took a bite. He liked the combination so much that the ointment soon became a popular Italian sauce.

To keep the sauce longer and not lose its beneficial properties, it is better to grind the ingredients in a marble mortar.

Recipes for basil sauce are found in other European cuisines, for example Pisto sauce in France, it does not contain nuts. In Austria, pumpkin seeds are used instead of nuts in pesto.

Tip

If you want classic pesto to last all winter, don't put cheese in it. It is best to do this before serving. Add more garlic: the spice will act as a preservative and protect the sauce from harmful bacteria.

2. Green basil sauce

This recipe is a variation of homemade pesto but with vinegar added. You can diversify the taste of the dish by adding cilantro, mint, ginger leaves to it.

3. Avocado Basil Sauce

Basil dishes are popular all over the world. In Thailand, for example, basil sauce with avocado is put on the table in honor of big celebrations.

To make a traditional Thai sauce, you need:

  • avocado;

  • lemon juice;

  • garlic;

  • basil;

  • olive oil;

  • salt, black pepper.

The ingredients are crushed and placed in a glass jar with a lid.

Store in the refrigerator or freeze and add to meat and seafood during cooking.

4. Sugo with basil

Another basil sauce invented by the Italians. The sauce is put on pizza, added to pasta, it goes well with fish and meat dishes.

The step-by-step recipe is simple: peel the tomatoes, cut them into squares. Fry the onion and garlic in a pan. Add tomatoes. Simmer for half an hour over low heat without a lid. 5 minutes before it's ready, add chopped green and purple basil to the mixture. You can add other herbs, such as cilantro.

Once cooked, remove the pan from the heat and pass the tomato mixture through a sieve. Add salt, freshly ground pepper, white wine or balsamic vinegar. Sugo is ready. It can be poured into pasteurized jars and rolled up.

Blanks are stored for 4 to 6 months in the refrigerator. A prerequisite is that the mixture must be covered with a layer of vegetable oil.

What can be done?

Make a sauce not only from green but also from purple basil. You can mix both herbs, then the taste of the workpiece will turn out to be more saturated.
